4 oz butter
1 cup water
1/2 tsp salt
1 cup flour
4 eggs
4 oz cheese of choice, grated
2 tsp fresh herbs snipped up (thyme or rosemary usually)
Bring butter, water and salt to a boil together over high heat. Reduce heat to medium.
Dump
flour in all at once. Stir rapidly with a wooden spoon. It will form
into a dough ball that pulls away from the sides of the pan. Continue
to cook for another couple of minutes. Let cool for a few minutes, then
add the eggs one at a time, stirring after each one until the egg is
completely absorbed by the dough. Mix in the cheese and herbs. Scoop
spoonfuls onto a parchment lined baking sheet, about an inch apart. Bake at 425 degrees
for 10 minutes, then reduce heat to 350 degrees for another 15-20
minutes, until puffed up and golden. Yields about 2 dozen normally.
