2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg
3/4 cup butter
2 cups sugar
2 eggs
15 oz pure pumpkin
Preheat oven to 325 degrees and set the oven rack in the middle. Generously grease and flour two 8x4 loaf pans.
In a medium bowl, whisk together flour, salt, baking soda, baking powder and the spices. Set aside.
With mixer, blend butter and sugar until just blended. Add eggs one at a time and mix thoroughly. Continue beating until light and fluffy, a few minutes. Beat in the pumpkin. The mixture might look grainy and curdled but that's normal. Slowly add the flour mixture and mix until combined.
Turn the batter evenly into the two loaf pans and bake for 65-75 minutes, until cake tester comes out clean. Let the loaves cool 10 minutes before turning out of the pans to cool completely on a wire rack.
